National Cannoli Day At Grove City Nursing Home
June 16, 2020Grove City, Ohio - Yesterday was National Cannoli Day! And, of course, Meadow Grove Transitional Care Center celebrated it the most delicious way. We enjoyed either a bowl-a cannoli or a cone-a cannoli or just a plain scoop of filling - yum!
Cannoli are Italian pastries that originated on the island of Sicily and are today a staple of Sicilian cuisine. Cannoli consist of tube-shaped shells of fried pastry dough, filled with a sweet, creamy filling usually containing ricotta. We used the following recipe from Allrecipes and made a cannoli dip!
Original recipe yields 10 servings
2 cups ricotta cheese
1 (8 ounces) package cream cheese
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract
1 cup miniature semisweet chocolate chips
Beat ricotta cheese and cream cheese together in a bowl until smooth; add sugar and vanilla. Continue to stir the mixture until sugar is completely incorporated. Fold chocolate chips through the cheese mixture. Cover the bowl with plastic wrap and refrigerate until chilled, at least 10 minutes. Serve with pizzelles or broken pieces of sugar waffles.
